Joel Lindquist is a pastry chef, chef and cookbook author with experience both in Sweden and abroad. Perhaps best known as the winner of the television program Dessertmästarna 2015 on Kanal 5.
Joel’s philosophy is simple. You can actually compare it to making ice cream. Anyone can buy milk, cream, refined white sugar, and eggs from caged hens and make ice cream. But there will be no further result of that. Instead Joel is searching for an awesome producer of fresh organic goat milk, which barely had time to cool, and unpasteurised organic cream from the best farmer. He picks up muscovado sugar from a fantastic grower on Mauritius and eggs from organic wild pedigree poultry from Skåne. What an amazing ice cream it gets! The same type of raw materials – but with a different mindset.
